Peach, Black Olive and Red Onion Relish  (From: Thrill of the Grill)

3 ripe peaches, chopped

½ cup black or Kalmata olives, chopped

1 small red onion, diced small

1 fresh or roasted red bell pepper, diced

4 T. olive oil

2 T. balsamic vinegar

1 t. minced garlic

1 t. thyme (1 T. fresh)

salt and pepper to taste

juice of one lemon

Combine peaches, olives, onion and red pepper in a bowl. Add olive oil, vinegar, garlic and thyme. Toss lightly, add salt and pepper. Just before serving, add lemon juice. Serve on grilled chicken thighs.
