Pesto
3 cups fresh basil leaves,
loosely packed3-5 garlic cloves
1/3 cup pine nuts
1/2 cup finely grated
parmesan1/3 cup olive oil
salt and pepper to taste
Combine all the dry ingredients in a food processor, process until smooth. With processor running, add the oil in a thin stream. Taste and adjust for seasoning and other ingredients. Serve on 1 lb. pasta.
